Lemon Chicken Orzo Soup

If you are a soup lover, add this lemon chicken orzo soup to your rotation. The bright lemon flavor and familiar chicken noodle base make such a cozy combination.

This is such an easy recipe to whip up and is guaranteed to satisfy everyone at the table!

What you’ll need:

  • Mirepoix – diced celery, carrots, and onion
  • Butter – for sauteeing the mirepoix
  • Garlic – an essential to any soup
  • Chicken broth – adds to the soup’s flavor
  • Rosemary – my favorite herb to add to any dish
  • Bay leaves – bring out the depth of flavor
  • Orzo – a delicious rice-shaped pasta
  • Cubed cooked chicken – I like to use chicken breast, but you can opt for chicken thighs
  • Fresh lemon juice – for that bright, lemony flavor
  • Parsley – adds the perfect freshness to the soup

Ingredients

  • 2 Carrots peeled and chopped
  • 2 Celery Stalks chopped
  • 1 Onion chopped finely
  • 2 Butter
  • 3 Cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 Bay Leaves
  • 1 tsp Rosemary
  • 1 cup Orzo
  • 1.5 cups Chicken cubed
  • 1 tbsp Lemon Juice
  • 1 tsp Parsley

Instructions

  • Saute' the carrots, celery, and onion in butter on medium-high heat for about 7 minutes.
  • Add in the garlic and saute' until fragrant – about 30 seconds to a minute
  • Pour in chicken broth and stir well. Deglaze the bottom of your pot while stirring. Add in bay leaves and rosemary. Bring to a boil.
  • Remove the bay leaves and add in orzo and chicken and simmer for 12 minutes over medium-low heat.
  • Add lemon juice and parsley to the pot. Add salt and pepper to taste.
  • Serve immediately.

Notes

If you are short on time, use a rotisserie chicken.
