Lemon Chicken Orzo Soup

This yummy lemon chicken orzo soup is cozy and full of healthy ingredients. Pair it with a crusty loaf of bread, and you have the perfect family meal for a cool fall evening.

Ingredients
  

  • 2 Carrots peeled and chopped
  • 2 Celery Stalks chopped
  • 1 Onion chopped finely
  • 2 Butter
  • 3 Cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 Bay Leaves
  • 1 tsp Rosemary
  • 1 cup Orzo
  • 1.5 cups Chicken cubed
  • 1 tbsp Lemon Juice
  • 1 tsp Parsley

Method
 

  1. Saute' the carrots, celery, and onion in butter on medium-high heat for about 7 minutes.
  2. Add in the garlic and saute' until fragrant - about 30 seconds to a minute
  3. Pour in chicken broth and stir well. Deglaze the bottom of your pot while stirring. Add in bay leaves and rosemary. Bring to a boil.
  4. Remove the bay leaves and add in orzo and chicken and simmer for 12 minutes over medium-low heat.
  5. Add lemon juice and parsley to the pot. Add salt and pepper to taste.
  6. Serve immediately.

Notes

If you are short on time, use a rotisserie chicken.
