Method
- Saute' the carrots, celery, and onion in butter on medium-high heat for about 7 minutes.
- Add in the garlic and saute' until fragrant - about 30 seconds to a minute
- Pour in chicken broth and stir well. Deglaze the bottom of your pot while stirring. Add in bay leaves and rosemary. Bring to a boil.
- Remove the bay leaves and add in orzo and chicken and simmer for 12 minutes over medium-low heat.
- Add lemon juice and parsley to the pot. Add salt and pepper to taste.
- Serve immediately.
Notes
If you are short on time, use a rotisserie chicken.
