Creamy Burrata Bruschetta

This Creamy Burrata Bruschetta is a quick, no-fuss appetizer that everyone will enjoy. Full of flavor and only taking a few minutes of prep, it's my go-to when we have guests coming over.

Ingredients

  • 2 cups grape tomatoes, quartered
  • 2 cloves garlic, grated
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 1 pkg burrata
  • 1 french baguette, sliced and toasted
  • balsamic glaze

Method

Make Crostinis
  1. Preheat oven to 350℉.
  2. Slice the baguette into equal slices, arrange on a baking sheet, and brush with olive oil. Add to oven for about 5-10 minutes, checking every minute to prevent burning or over-toasting.
Make Bruschetta Mixture
  1. Preheat oven to 400℉.
  2. To a small bowl, add quartered tomatoes, grated garlic, olive oil, balsamic vinegar, oregano, and salt and pepper. Mix well.
  3. Add mixture to parchment lined baking sheet. Add to oven for 15-20 minutes.
  4. Remove and allow to cool slightly.
Assemble Creamy Burrata Bruschetta
  1. Add both balls of burrata to a plate, break apart slightly to open them up. Add the bruschetta mixture to the top. Drizzle balsamic glaze over and finish with flaky salt.
  2. Serve with finished crostinis. Enjoy!
